# Ingredients
## Vegetables
- 3 cups broccoli, chopped
- 1 potato, chopped
- 1 onion, roughly chopped
- ½ bell pepper (capsicum), chopped
- 3-4 garlic cloves
- 1 sprig cilantro
## Base and Seasonings
- 1 tbsp olive oil
- 1 tbsp all-purpose flour
- Salt to taste
- 1 tsp pepper powder
- ½ tsp cumin powder
- 2-3 tbsp fresh cream
- 3 cups water/chicken stock/vegetable stock
# Instructions
1. Heat olive oil in a pot
2. Add onions, garlic, bell pepper, potato, cilantro and broccoli
3. Sauté for a couple of minutes
4. Add flour and fry for another minute
5. Add 1 cup of water or stock and cook for about 10 minutes
6. Switch off and let it cool slightly
7. Blend until smooth
8. Return pureed soup to the pot
9. Add remaining stock or water and heat
10. Season with salt, pepper powder, and cumin powder
11. Adjust consistency and seasonings to taste
12. Finally add the cream and switch off
# Notes
- Serve hot with croutons
- Can use vegetable stock for vegetarian version
- Adjust cream quantity for desired richness
- Blending in batches if needed for smoother consistency
