# Pumpkin Soup
A creamy and comforting soup made with red pumpkin and coconut milk, seasoned with Indian spices.

# Ingredients
## Main Ingredients
- 250g red pumpkin, sliced
- 1 onion, sliced
- 2-3 cloves
- 1 small piece ginger
- 1 cup coconut milk
- 1 cup water
- 2 tsp butter
## Seasonings
- Salt to taste
- Black salt to taste
- Roasted cumin powder to taste
- Fresh mint leaves for garnish
# Instructions
1. Wash and peel pumpkin, slice into pieces
2. Peel and slice onion
3. Heat butter in a kadai (deep pan)
4. Add cloves and sauté for a minute
5. Add onions and sauté until lightly colored
6. Add pumpkin slices with a little salt, sauté until soft
7. Allow mixture to cool
8. Blend mixture with 1 cup water in a mixer
9. Transfer to kadai and bring to boil
10. Check and adjust salt if needed
11. Add black salt and roasted cumin powder
12. Add coconut milk and mix well
13. Remove from heat immediately (do not boil after adding coconut milk)
14. Serve garnished with chopped mint leaves
# Notes
- Consistency should not be watery
- Do not boil after adding coconut milk to prevent curdling
- Can adjust thickness by varying water quantity
- Fresh mint leaves add a refreshing touch
- Can be served hot or at room temperature
- Perfect starter for autumn/winter meals
